Product Description

Mid-Autumn Traditional Mooncake Mould flower geometric butterfly

This cookie stamp made of good quality polycarbonate is easy to use, long-lasting, robust and dishwasher-proof.

Each cookie stamp comes with 10.5cm long stamping handle which fits nicely into different sized hands. Mechanism works like a spring-loaded ink stamp.

Cookie size: 5.5 X 6.5 cm

Each triangle segment yields 50g mooncake.

Each set comes with 5 interchangeable cookie discs

RECIPE for SNOWSKIN MOONCAKE
(Make snowskin)
+ 45g glutinous rice flour
+ 35g plain rice flour
+ 20g wheat starch
+ 40g sugar or sugar powder
+ 185g milk / unsweetened coconut milk
+ 18g vegetable oil

HOW'S IT MADE
1. Mix the flours well in a bowl

2. Dissolve sugar in milk inside another bowl
a) add oil then combine well

3. Pour mixed liquid to bowl with flour mixture
a) stir to combine well
b) then strain mixture once
c) cover with clingfilm
d) allow to rest (30 min)

4. Steam over high heat (30 min) until well cooked
a) take cooked mixture to stir well until no lumps
b) allow to cool then transfer mixture to a plate
c) wrap well with clingfilm
d) knead with hands a few minutes for smooth mixture
e) refrigerate 4 hours

(Prepare mooncake filling)
+ 1 & 1/2 tbsp custard powder
+ 1/2 cup wheat starch & 2 tbsp cake flour
+ 100ml milk
+ 2 tbsp or 30g butter (unsalted)
+ 1/2 cup or 60g granulated sugar
+ 2 eggs (100g) or 1 large egg & another yolk

HOW'S IT MADE
5. Simmer milk in a pot over very low heat
a) add then stir in sugar
b) sift in wheat starch & add custard powder
c) stir in until well combined
d) add in whisked egg & butter
e) keep heating & stir forcefully until thickenned
f ) move from fire & keep stirring when still hot
g) transfer to a plate lined with clingfilm
h) allow to cool down then wrap well in clingfilm
i ) refrigerate (3-4 hours) until firm

(Dusting flour)
6. Stir fry 1/3 cup glutinous rice flour over low heat
a) it is cooked when slightly brown color

(Assemble snowskin mooncake)
+ dusting flour
+ snowskin
+ filling
+ mooncake mould / stamp

7. Divide filling into 30g balls
a) measure snowskin into 20g each

8. Prepare mooncake mold / stamp
a) dust mold / stamp
b) shake off excess
c) dust your hands (or wear plastic gloves)

9. Take 1 filling & 1 snowskin
a) flatten snowskin into disc with your hands
b) wrap filling then shape into a ball
c) then shape into an oval
d) place oval inside mold / stamp
e) flatten oven into mold / stamp
f ) unmold then repeat to finish
